There are two things you should never say to a person, never ever, those things are; one to ask them to Calm down, and two, telling them they are too defensive.

You tell people that they are too defensive when you want to invalidate the purpose of their defense. You’re too defensive actually means, “I’m punching you but you’re not supposed to duck”.
